>> Monday, October 20, 2008

Here are this week’s four questions.
#1. Name something you use cream cheese in/on.

  • Mashed Potatoes, Harsh Brown, and Salad.
#2. Do you use yogurt in any recipes?
  • Nope, not at all.
#3. Macaroni salad. What do you like/put in yours?
  • This is my favorite. We put condensed milk, evaporated milk, some fruits, fruit punch in a can, nestle cream and cheese cut into cubes, raisins and
#4. Share a recipe that you use sour cream in.

Sour Cream and Chive Mashed Potatoes

4 pounds baking potatoes, peeled and quartered 1 1/2 cup sour cream 6 tablespoons butter, cut into small pieces 1 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 1/2 cup snipped chives

Place the potatoes in a pot and add enough cold water to cover by 1 inch. Bring to a boil, reduce the heat, cover, and cook 15 to 20 minutes, or until tender. Reserve 1/4 cup of the cooking water. Drain the potatoes.

Return the hot potatoes to the pot. Mash with a potato masher until smooth. Add the sour cream, butter, salt, and pepper. Mash until fluffy, adding some of the cooking water if necessary. Stir in the chives.

I think my grandma makes similar potatoes like that. They're pretty good!
